Apple-Raisin Crumble

Feeds 10 friends.

Ingredients:

  • 8 medium apples, sliced 
  • ⅓ cup raisins
  • 2 tbsp + 1 tsp packed dark brown sugar
  • 1 tsp vanilla extract
  • 1 tbsp cornstarch
  • 12 gingersnap cookies
  • 1 tbsp canola oil
  • 12 tsp ground cinnamon
  • 2 tbsp maple syrup or honey

Directions:

  • Preheat oven to 350 °F
  • In a medium mixing bowl, add together the apples, raisins, 2 tbsp brown sugar, vanilla extract and cornstarch. Toss together until sugar and cornstarch is dissolved. 
  • Put gingersnaps in a ziplock bag, then crush with the back of a spoon until coarse. 
  • Mix all remaining ingredients together with the gingersnaps, except for the syrup. 
  • Put gingersnap mixture on top of fruit.
  • Bake, uncovered, for 45 minutes or until the fruit is bubbly. Remove from heat and drizzle on the syrup.
